This is a week of cheap, no-cook dinners for a family with no refrigerator or stove. I may assume that you are going to the store that day, such as fetching salad greens and keeping them in a cooler until dinner time. You have to adapt recipes to what you have.
These no-cook, pantry recipes are good for if there is a storm or other emergency and the power is out. These are also helpful for dorm living, transitional housing, and other situations where you don’t know what equipment might be available.
*Pantry items: yogurt, hard cheeses, eggs (for a short period), salted butter, cured meats, bread, jelly, soy sauce, ketchup, mustard, honey, apple cider vinegar, and olive oil do not have to be refrigerated. If it smells funny, don’t eat it.
Recipes:
Apple Fennel Mustard Slaw (sub apple cider vinegar for lemon juice)
Bulgur Salad with Chickpeas, Roasted Red Peppers and Spiced Cumin Dressing (uses lettuce, soak bulgur at room temp for 3 hours)
Ham and Coleslaw Hero (uses slaw mix, omit mayo)
Mediterranean Tuna Antipasto Salad (uses salad greens, skip capers, substitute apple cider vinegar for lemon juice)
No Bake Energy Bites
Panzanella Bread Salad (omit basil if necessary)
Quick No Cook “Oatmeal” (uses milk, does not have to be almond milk)
Thai Chicken Crunch Wraps (uses lettuce, sub plain yogurt for mayo)
Triple Bean Salad (uses peppers, substitute apple cider vinegar for lemon juice)
Turkey, Corn, and Sun-Dried Tomato Wraps (sub vegetable oil for canola oil, uses lettuce)
Zucchini-Mushroom “Linguine” (sub apple cider vinegar for lemon juice)
